How to make pumpkin bread

1. Steam the pumpkin, peel it and mash it into a paste. Take out the cheese and melt it.

2. Weigh the high-gluten flour, salt and fine sugar and place them diagonally. Dig a hole in the middle and place the baking powder.

3. Add milk and knead the dough using the second speed of the chef machine. Then add egg liquid and pumpkin puree cheese and knead the dough for 20 minutes.

4. Add butter after 10 minutes and let the food processor rest for 5 minutes.

5. Knead the dough at the second speed for 20 minutes and then remove the dough to release the air.

6. Knead the dough by beating it for 3 minutes, then put it in the pot for fermentation and cover it with a lid. The oven fermentation time is 60 minutes.

7. After 60 minutes of fermentation, it will be twice as large and can be poke with your hand if it does not bounce back.

8. Take out the air, divide into 12 portions, cover with plastic wrap and let stand for 15 minutes.

9. That's it.

10. Use the quilt sewing thread to make a cross point, put the dough in and lift the thread to tighten it. Don’t make it too tight because it will expand during fermentation.

11. Put it in the oven for secondary fermentation for 60 minutes.

12. Secondary fermentation is completed! Brush the pumpkin with some egg wash.

13. Preheat the oven to 180° for 10 minutes, then set the oven to 180° for 20 minutes to complete baking.
