6. Add milk and mix.

7. Add corn oil in three batches and beat until evenly mixed.

8. Add the flour that has been sprinkled three times in three batches.

9. Add flour into the egg mixture and stir evenly. Note that you should stir it up and down, not in circles.

10. The egg yolk paste is ready! The egg yolk paste at this point should have lines on it when you use a rubber spatula to drip it into the bucket.

11. The separated egg whites should be refrigerated before use. The bucket should be cold at this time, which will make it easier to beat the egg whites.

12. Beat on high speed until coarse foam is formed, about 60 seconds.

13. Add fine sugar and continue beating at high speed for 60 seconds, then switch to low speed and beat for 60 seconds. The egg white should be very fine and have grooves!

14. Take one third of the egg white and mix it with the egg yolk paste and stir evenly. Note that the technique is to stir it upside down! If you use the wrong technique, you will easily fail!

15. Pour the egg yolk paste into the egg white again and mix well.

16. The cake batter should look like this, with texture.

17. Take out the square mold and pour the cake batter into the mold.

18. Shake it a few times and use a toothpick to make a Z-shape to remove bubbles. The smooth surface will look beautiful when baked!

19. Preheat the oven to 150° for 10 minutes. Must be 10 minutes! Multiple tests can reach 150° in 10 minutes

20. Finally, set the oven temperature to 150° and the time to 45 minutes. When the thermometer shows 140°, the baking process is complete. The photo shows what it looked like after 20 minutes.

After about 21 or 40 minutes, the surface is smooth and has no cracks!

22. After baking, immediately turn it upside down on the grid to cool, cover it with a wet towel, and remove it from the mold after 3 hours! Be careful not to buckle upside down, otherwise it will collapse. This step is very important!

23. It is easy to demould the cake after it has cooled!

27. Put the cut cake slices back into the square mold and refrigerate.
