Ingredients for deep-fried eggplant

300 grams of eggplant (purple skin, long), 150 grams of eggs, 60 grams of wheat flour, 50 grams of starch (pea), 3 grams of salt, 2 grams of MSG, 10 grams of onion juice, 10 grams of ginger juice, 5 grams of cooking wine, 5 grams of sesame oil, 15 grams of cumin, and 60 grams of soybean oil.

How to make fried eggplant

1. Wash and peel the eggplant, cut into 1.5 cm square dices, and mix well with salt, MSG, onion, ginger juice, cooking wine and sesame oil.

2. Crack the eggs into a bowl, stir them, add 25 grams of flour and 75 grams of wet starch (50 grams of starch plus water) to make an egg powder paste, then add 15 grams of oil and mix well.

3. Coat the diced eggplant with dry flour, then coat them with egg powder paste one by one. Deep-fry them in 50% hot oil and remove from the oil.

4. Wait until the oil temperature rises, then fry again until golden and crispy on the outside. Remove from the pan, place on a plate, and sprinkle with cumin.

Eggplant precautions

1. It is best not to peel the eggplant when eating it, because the eggplant skin contains vitamin B. Vitamin B and vitamin C are a good pair. The metabolism of vitamin C requires the support of vitamin B. Eating eggplant with the skin helps promote the absorption of vitamin C.

2. Although there are many ways to eat eggplant, most of them require high cooking temperatures and long cooking times. Not only is it greasy, but it also causes a great loss of nutrients. The loss of vitamins in fried eggplant can reach more than 50%. Among all the ways to eat eggplant, mixing it with eggplant puree is the healthiest.

3. Eggplant and crab meat are both cold foods. Eating them together will often make the stomach feel uncomfortable, and in severe cases it can cause diarrhea. People with weak spleen and stomach should avoid eating them.

4. Eating eggplant raw can cause poisoning. Raw eggplant contains a toxin called solanine. Solanine is more common in sprouted potatoes and is also found in raw eggplant.

5. Pregnant friends should also choose fresh eggplants. It is best not to choose old eggplants, especially old eggplants after autumn, which contain more solanine, which is harmful to the human body and should not be eaten too much.
