5. Add milk and mix well

6. Mix flour and matcha powder

7. Sieve and pour into the egg yolk paste and mix well

8. The batter should not be granular. Be careful not to over-mix it.

9. Add blackcurrant to the mixed batter

10. Preheat the oven to 130 degrees for 10 minutes before making egg whites (the temperature of each oven is different, my oven temperature is slightly higher)

11. Add two drops of white vinegar to the egg whites to speed up the whipping process.

12. When the egg whites have fish eyes, add one-third of sugar and continue beating.

13. After the fish eyes are reduced, add one-third of sugar and continue beating.

14. When the dough has lines, add the remaining sugar

15. When you lift the whisk and there is an obvious bend, it means the foam is wet and needs to be beaten further.

16. When the whisk is upright, it means dry foaming.

17. Take one-third of the egg whites and stir into the batter.

18. Note that stirring should be done by turning over, not by making circles.

19. Pour the mixed batter into the remaining egg whites and continue to stir

20. Stir evenly and quickly to avoid defoaming the egg white.

21. Pour the cake batter into the mold

22. Gently tap the bottom of the mold to shake out the air.

23. Put the cake batter into the oven at 130 degrees for 70 minutes

24. It will take about 20 minutes to develop.

25. When the time is up, take it out immediately, tap the bottom again and turn it upside down to let it cool.

26. Remove from the mold after it is completely cooled

27. Success! ! !
