How to make traditional bread with ordinary flour refrigerated fermentation method

1. Mix all the dough ingredients and refrigerate for more than 12 hours, no more than three days. I fermented it for 32 hours. Take it out after it is done. Put all the dough ingredients (except butter) into the bread machine, knead into a smooth ball, then add butter and knead for about 23 minutes.

2. Take out the dough and pound it on the chopping board a few times to form a large glove film, not too thin.

3. Place the dough in a sealed plastic box and let it ferment until it doubles in size.

4. Sprinkle a little flour on the chopping board, divide the dough into nine portions, knead evenly, cover with plastic wrap and let it rest for 15 minutes.

5. Roll the dough into a strip about 35cm long. Hold the middle with one hand and use the other hand to twist the folded dough into a twist. Stuff it into the space in the middle and tuck the two ends under. It is best to form five petals.

6. Place on a baking tray, put into the oven, place a pan of boiling water at the bottom, and ferment for a second time until it is twice as large.

7. Preheat the oven to 180 degrees and bake for 36 to 40 minutes.

9. After the bread is baked, move it to the drying rack, brush it with liquid butter immediately, and pack it into bags after it cools down.
