How to make yogurt steamed cake

1. Prepare all the ingredients and separate the egg whites and eggs. (Because there is no low-gluten flour at home, the flour bought from the supermarket is generally medium-gluten flour, and adding starch can make synthetic low-gluten flour [medium + starch = 65g + 5g]. If you have low-gluten flour, it is best to use low-gluten flour)

2. Beat the egg whites until they become coarse foam and add the first sugar (add sugar to the egg white paste three times, add the appropriate amount of sugar according to your taste)

3. Beat the egg whites until they are slightly frothy, and add the sugar for the second time (this is very easy with an electric egg beater, but using this kind of egg beater is quite tiring)

4. Keep beating the egg white batter until it forms a small peak, then add sugar for the third time.

5. Keep beating the egg white batter. Until there are obvious lines and you can insert a chopstick into it without the chopstick falling over, it's ok!

6. Next, make the egg yolk paste. Add appropriate amount of sugar, cooking oil and yogurt to the egg yolk and stir well.

7. Add flour to the stirred yogurt and egg yolk paste and stir evenly into a particle-free egg paste (if you have a flour sieve, you can sift the flour)

8. After mixing the egg yolk and flour paste, add the whipped egg white paste and mix well from left to right (do not stir in a circular motion). Add the egg white paste into the egg yolk paste three times and mix well.

9. After mixing well, you can add some dried cranberries or dried red dates according to your taste, or you can add nothing.

10. After mixing, prepare a clean mold, brush it with a thin layer of oil, pour in the egg batter, tap it gently on the table twice, cover it with plastic wrap, and put it in to steam after the water in the steamer boils!

11. Keep steaming for 25 to 30 minutes and then remove from the pot.

12. Then turn the plate upside down on the mold, and then turn it back down, and the fragrant yogurt steamed cake is ready!
