How to make chocolate toast with Tangzhong method

1. Make the soup first. Add 20g of high flour and 80g of milk, mix well and pour into the pot. Cook over low heat, stirring constantly until there are grains. Remove from heat and cool for later use.

2. Mix the main ingredients except butter and salt, add soup stock and milk as needed. From my personal experience, if you don't need whole wheat flour, you can add less. Knead, knead, knead... (I knead by hand. If you are afraid of sticky hands, here is a method. When kneading the dough, don't put it in a bowl or on any board. Just do it on the marble workbench in the kitchen. Wipe it clean. If your hands are sticky when kneading, put some softened butter on your hands, knead and knead.) I kneaded it for about half an hour. I'm a novice. Hehe, this is a thick film after 15 minutes.

3. Add salt after kneading evenly, and continue kneading. Since I am a novice, I get tired easily (a baby kicked in my stomach). I usually can't knead the glove film, which is slightly thicker and tastes good... Cover with plastic wrap and ferment for about an hour

4. Make chocolate sauce during fermentation. Add 20g butter and chocolate, heat in water, and stir. If you like chocolate, you can add more to prevent it from cracking and flowing out easily during baking...

5. Fermentation is done, double in size, press out the air, and relax for 15 minutes

6. Roll the dough thin and long, add cooled chocolate sauce (don’t use liquid chocolate sauce, it’s hard to handle, solid chocolate sauce is easier to handle), roll it up and put it into the toast box

7. Cover with plastic wrap for secondary fermentation, which will take about one or two hours until it is 80% full.

8. You can start baking. Preheat the oven to 180 degrees in advance and bake for 35 minutes. Remember to cover the cake in the middle, otherwise it will burn (I cooked it a little late and it was a little dark...)

9. It’s baked. If you can’t wait, you can tear it apart and eat it. It’s super sweet. If you like to slice it, you need to wait for it to cool down and refrigerate it for a while until the chocolate solidifies.
