Locals often eat them for breakfast. This breakfast has a long history and has been loved by people as early as the Taiping Heavenly Kingdom period. The reason why Sanhe rice dumplings became so famous is closely related to Chen Yucheng, a young general of the Taiping Heavenly Kingdom. It is said that the army led by Chen Yucheng was deeply loved by the people of Sanhe, and the people were willing to give food and drink to the Taiping Army soldiers. Later, as Chen Yucheng and the Taiping Army soldiers traveled all over the south and north of the Yangtze River, the reputation of "Sanhe Rice Dumplings" also spread everywhere.

Ingredients: rice noodles, white rice shrimp, tofu, diced meat

step:

  1. Making filling for Sanhe rice dumplings: Wash the rice and shrimp, cut the dried tofu into soybean size, place the wok on high heat, add in the cooked oil and heat it up, first pour in the diced meat and fry until cooked, then add in the diced tofu, chopped green onion, soy sauce, salt and MSG and stir-fry, slowly pour in the diluted starch, stop stirring, and bring to a boil to make the filling.

  2. Making the skin: Place a pot on medium heat, add the rice noodles with salt, and fry until it reaches about 60C. Then add a little water, stir evenly, and serve after cooking. Place the dough on the chopping board to cool slightly, knead it thoroughly, and make several dough pieces weighing about 65 grams. Knead the dough into balls, and use a knife to press them into dough sheets with a diameter of 10 cm and a thickness of 1.7 mm.

  3. Shaping: Hold the dough with your left hand, wrap the stuffing, and pinch it into the shape of dumplings to form the raw dough.

  4. Frying: Place an iron pan on high heat, add rapeseed oil, and when it is 70% hot, put the raw dumplings in. When they turn golden brown, switch to medium heat and fry for about 5 minutes. Remove from the pan and serve.

1. Indica rice flour is rice flour made from indica non-glutinous rice. Among rice proteins, 80% is alkaline-soluble glutenin with high lysine content, which is higher than other grains. The biological value (BV) of rice protein is 77, the protein utility ratio (PER value) is 2.2, and the protein digestibility is over 90%, all of which are higher than other grains. Therefore, rice protein has high nutritional value.
