How to make cranberry cookies

After a hard day at work, coming home is like eating the food you want and then having a good sleep. The method of making cranberry cookies is not very complicated. You just need to prepare fresh ingredients and follow the steps.

1. Prepare all ingredients and weigh the proportions. 200g low flour (or 100g low flour plus 100g corn starch), 55g powdered sugar, 100g butter, and 1g salt.

2. Soak the cranberries in clean water or rum. After soaking, use kitchen paper to absorb the moisture and set aside.

3. After the butter has softened naturally, pour it into a large water-free bowl.

4. Add sifted powdered sugar and salt. Stir evenly with a spatula first.

5. Use an electric whisk to beat until the volume expands slightly and the color becomes lighter and whiter.

6. Sift the low flour and add it into the whipped butter.

7. Stir it with a spatula first.

8. Knead it into a smooth dough with your hands.

9. Wrap the kneaded dough with plastic wrap and refrigerate for 1 hour.

10. Preheat the oven to 170℃ for 5 minutes. Take out the refrigerated dough and roll it into small balls, each weighing about 8g.

11. Place the rolled small balls on a baking tray lined with greaseproof paper and press gently with your thumb.

12. Add a dried cranberry.

13. Press it flat again, and natural cracks will appear, which is very beautiful.

14. Arrange each cookie piece, making sure there is space between each piece.

15. Put it in the oven and bake at 170℃ for 15-18 minutes.

16. After the cookies are out of the oven, let them cool naturally before eating.

17. Cranberry cookies are fragrant and crispy, so delicious that you can’t stop eating them.
