Fish head - The head of pomfret is relatively small and generally does not need to be removed;

Fish scales - Pomfret scales need to be scraped off, but its scales are relatively thin and slippery, so it is not easy to scrape them off. At this time, you can scrape them off quickly by hitting from the tail of the pomfret in reverse.

Gills - Pomfret gills can be pulled off directly by hand. There is a hard piece at the head of the fish that can be lifted up. Lift it up and you will see the red fan shape inside. Use your fingers to pry it open and pull it off.

Viscera - Of course, the internal organs of the pomfret must be cleaned. Just use scissors to cut towards the direction of the fish head, and cut until slightly below the gills. Then take out everything inside, and the internal organs can be taken out. The black membrane inside the pomfret also needs to be washed off, otherwise it will taste a bit fishy.

Pomfret contains a variety of nutrients. 100 grams of fish contains 15.6 grams of protein, 6.6 grams of fat, 0.2 grams of carbohydrates, 19 milligrams of calcium, 240 milligrams of phosphorus, and 0.3 milligrams of iron. It is rich in unsaturated fatty acids, which can lower cholesterol; it is rich in trace elements selenium and magnesium, which can prevent cardiovascular diseases such as coronary artery sclerosis, delay body aging and prevent the occurrence of cancer.

Pomfret has the effects of nourishing qi and blood, replenishing the stomach and essence, lubricating joints, softening tendons and bones. It is very effective for indigestion, spleen deficiency and diarrhea, anemia, and muscle and bone pain. Flatfish can also be used to treat children's long-term illness, physical weakness, insufficient qi and blood, fatigue, loss of appetite and other symptoms.

Note: Pomfret should not be fried with animal oil; do not eat it with mutton.
