How to make classic Portuguese egg tarts (mini)

1. Prepare the ingredients, eggs, fresh milk, fresh cream, sugar, condensed milk, etc.

2. Separate the egg white and yolk, keep only the yolk, and stir the yolk evenly.

3. Mix the fresh milk and cream, add sugar as you like, heat over low heat to dissolve the sugar, and then add condensed milk to sweeten it (you can omit it if you don’t like it too sweet)

4. Pour the beaten egg yolks into the previously stirred milk mixture and stir again. Then filter through a strainer.

5. Defrost the egg tart crust fully and pour the liquid into it. Note that it only needs to be 70% full, otherwise it will expand and overflow when put into the oven.

6. Finally, preheat the oven for 5 minutes, then put the egg tarts in and heat them for 25 minutes. After it has been heated for 20 minutes, open it and put the baking tray into the first layer to continue heating.
