How to make breakfast pepper and pork burrito

1. Wash and cut 1 to 2 hot peppers into shreds. Chop green onion, ginger and garlic and set aside.

2. 50-100g lean meat, washed

3. Cut the lean meat into shreds, add cooking wine, light soy sauce, pepper and starch in appropriate amounts and marinate for 5 minutes. (Take advantage of this time to make the egg pancake)

4. Beat 1 egg, add chopped green onion, pepper powder, salt, and stir appropriately.

5. Sift 50g of flour (about 2 spoons in the picture below) into the egg liquid

6. Add 30ml of warm water, a small spoonful of peanut oil, and mix the flour and egg liquid evenly into an egg paste.

7. Preheat the pan at low temperature, adjust to medium heat, add a small amount of peanut oil to heat the pan, then add the egg liquid all at once, lift the pan and turn it to allow the egg liquid to evenly cover the bottom of the pan, cover it, simmer for 2 minutes, open the lid, take out the pancake and place it on a plate.

8. Stir-fry the shredded pork. Preheat the wok first, add a proper amount of high-temperature cold oil to 70% hot, quickly put the shredded pork in, spread it out and stir-fry until it changes color

9. Set the shredded pork aside, stir-fry the chopped green onion, ginger and garlic, add the shredded chili peppers, and add appropriate amount of salt, pepper powder, and light soy sauce for seasoning.

10. Stir-fry the shredded pork and shredded chili peppers for 1 minute, add 2 drops of aged vinegar and turn off the heat.

11. Serve the fried shredded pork with hot peppers on a plate.

12. Put the shredded pork with hot peppers into the scallion omelet and spread it evenly.

13. Roll up the pancake and serve.
