How to make Shaanxi fried noodle skin

If you don't cook at home, the house will inevitably feel a little lonely. If a couple doesn't even eat together every day, their relationship is more likely to have problems. Therefore, even if you are busy at work, it is best to cook at home. The method of Shaanxi fried noodles is simple and will not take up too much of the cook's time.

1. Knead the dough with light salt water and knead it into a dough. Knead it for a while longer to make it chewier (I believe everyone knows how to knead dough, so I won’t go into details, hahaha). Cover the kneaded dough with plastic wrap and let it rest for 30 minutes.

2. Knead the dough after it has rested, then wash it with clean water (that is, knead the dough repeatedly in the water, and continue kneading the dough when the water turns white), and keep washing until the water becomes clear. 3. Pour the water used to wash the gluten into a clean basin and set aside.

3.4. Put the washed gluten into a plate and steam it for 15 minutes. Set aside until cooked. 5. Let the flour water sit for about 6 hours (I knead the dough at night and let it sit overnight). 6. Pour out the clear water on top of the settled noodles. Don't pour out too much of the clear water, leave a little, otherwise the steamed cold skin will be too dry. 7. Use a spoon to stir the remaining flour water evenly, brush the cold noodles evenly with cooked oil (cooked and cooled cooking oil), and scoop a spoonful of flour water into the noodles (one and a half spoons or two spoons will do, depending on the size of the noodles). 8. Boil water in a pot, put the Luo Luo into the pot and steam for 2-3 minutes (it is best to use a transparent lid so that you can see clearly, the cold skin is cooked when big bubbles appear). 9. Take out the Luo Luo and place it in a basin of cold water. After the Luo Luo is cool, peel off the cold skin.

4. Brush a layer of cooked oil on the steamed cold skin to prevent the steamed cold skin from sticking to each other.

5. Cut the cold skin and gluten and set aside

6. Beat the eggs. Chop the shallot. Cut carrot, ham, cucumber and cabbage into shreds and set aside.

7. Heat the oil and fry the eggs. After the eggs are fried, place them on a plate (I didn't use a frying pan so they were a little small).

8. Take a small bowl to prepare the sauce. Add the above seasonings except pepper powder. The sesame paste may be too thick to stir. You can add a little cold boiled water and mix well.

9. Heat the oil, add the chopped green onion and carrot, then the shredded cabbage, cucumber, shredded ham and pepper powder. When stir-fry is 80% cooked, add the cold skin gluten, and finally pour in the sauce, stir evenly, collect the sauce, remove from the heat, and serve. Let’s eat!
