Then, soak the pig intestines in clean water and add peppercorns and star anise. Add some liquor or beer to it. It can remove fishy smell and enhance freshness. About an hour.

After soaking, put the pig intestines in a pot and blanch them in water. During this time, add some white wine or beer to the pot, and use a large spoon to scoop away the floating foam and other impurities.

After blanching the pig's large intestine, take it out and place it on the chopping board. Use an unused, clean toothpick to poke small holes in the pig's large intestine from head to tail, up and down, to make it easier to absorb flavor when stewing. Then cut into evenly sized intestinal segments.

After preparation, first fry the pig large intestine in oil, then pour warm water, dark soy sauce, cooking wine, sugar, starch and other auxiliary ingredients into the pot to make a stew. Use a small amount of salt. After the water boils, put the fried large intestine in. Bring to a boil over high heat, then simmer over low heat until the aroma comes out.

How to make pig intestines delicious?

Pork Intestine Tofu

Ingredients: cooked pork intestines, northern tofu, oil, salt, pepper, oil, rice wine, minced ginger, minced green onion, minced garlic, dried chili peppers, chili powder, corn starch, red oil bean paste, pepper, water, and coriander.

1. Prepare the ingredients. The pig intestines are semi-finished products. Just wash and cut them into pieces. Chop the green onions, mince the ginger and garlic, chop the coriander, cut the tofu into pieces, and chop 2 dried chilies.

2. Add rice wine and water to the starch and set aside.

3. When everything is ready, add appropriate amount of oil into the pan.

4. Don’t wait for the oil to smoke, add the chopped garlic, ginger and green onion now.

5. Add another teaspoon of red bean paste and stir-fry until fragrant. Turn down the heat and don’t make the pan too hot, otherwise the bean paste will stick together into a clumping mass.

6. Let the bean paste slide and turn to high heat. Add pepper powder, Sichuan peppercorns, chopped chili pepper and chili powder and stir-fry.

7. Stir-fry until the chopped chili changes color slightly, then add the pig intestines and stir-fry until the pig intestines are slightly oily.

8. Then add some boiling water until the water almost covers the pig intestines. Add some salt according to personal taste and stir well.

9. Then pour in the tofu.

10. Cover the pot and simmer for a while until the tofu is cooked and the juice is basically absorbed. Pay attention to the pot in the middle to make sure it does not dry out.

11. Open the pot and check that it is almost cooked, then pour in the prepared starch water.

12. It’s done when the starch water basically covers the tofu.

13. Finally, sprinkle in the coriander, stir, and serve!
