1. Materials

200g green pepper, 100g Norwegian salmon, 1 mushroom, 10g green onion, 10g ginger, 1 tsp (5g) sugar, 1 tbsp (15ml) light soy sauce, 1 tsp (5ml) sesame oil.

2. Method

Prepare the ingredients.

Wash the green peppers, remove the seeds and tear them into small pieces with your hands, cut the salmon into slices, cut the mushrooms into small slices, put a little cooking wine in a bowl and soak the salmon slices for 10 minutes.

Put oil in the pot and add chopped scallion and ginger and stir-fry until fragrant.

Add salmon fillet.

Pour in the green pepper slices and stir-fry for two or three times.

2. Stir-fried mullet fillet

1. Materials

400 grams of mullet and 50 grams of cucumber slices. Seasoning: 1 tablespoon of lard, 1/2 tablespoon each of Shaoxing wine and vinegar, 1/3 teaspoon each of salt and MSG, a little onion, shredded ginger, and garlic slices, and an appropriate amount of starch.

2. Method

Peel the skin of the mullet, remove the ink bag inside the belly, wash it, slice it thinly with a razor blade, blanch it in boiling water, and then remove it from the water and drain it.

Heat the wok, add some oil, stir-fry the scallion, ginger and garlic, add Shaoxing wine and vinegar, add soup and bring to a boil, add salt and MSG to adjust the taste, then add cucumber slices and mullet slices, thicken with water starch, drizzle with cooking oil, and serve.

Material replacement

Replace mullet fillets with squid fillets and call it fried squid fillets.

Add red oil and shredded pepper to the seasoning, which is called stir-fried spicy mullet slices.

3. Stir-fried black fish fillet

1. Materials

Black fish fillet, half a carrot, half a green pepper, 1 winter bamboo shoot, a few slices of ginger, a few scallions, salt, chicken powder, pepper, cooking wine, and cornstarch.

2. Method

After cleaning the black fish fillets, add appropriate amount of salt, a little chicken powder, white pepper powder, cooking wine and cornstarch, mix well, and marinate in the refrigerator for more than 10 minutes.

Slice the carrots, green peppers and bamboo shoots, slice the ginger, and cut the green onions into sections.

Heat oil in a pan, add fish fillets and stir-fry until they turn white. Turn off heat and set aside.

Heat the remaining oil in the pan, add the ginger slices and scallion segments and stir-fry, then add the carrots and winter bamboo shoots slices in turn and stir-fry (you can sprinkle a little water in to increase the moisture of the ingredients), and stir-fry until the carrots are slightly soft.

Add green pepper and stir-fry for 1 minute, add a little salt, and finally pour in the black fish fillets before serving. Add a little thin cornstarch water to thicken and stir well.

4. Stir-fried fish fillet with pickled pepper

1. Materials

Longli fish fillet, pickled pepper, ginger, garlic, green onion, and celery.

2. Method

Cut the fish into thin slices (not too thin, otherwise it will break easily when frying), mix well with salt, chicken essence or mushroom essence, a small amount of sugar, cooking wine and starch, cut celery into strips, slice ginger, smash garlic, cut onion into sections, and chop pickled pepper.

Put the pot on the fire, pour in vegetable oil and when the oil temperature reaches 50% cooked, put in the sashimi and remove the fish slices as soon as they are cooked.

Leave some oil in the pot and add ginger, garlic, pickled pepper and scallion. When fragrant, add celery and a small amount of salt, sugar and light soy sauce to season and stir-fry. Finally, add the fish fillets and mix, then turn off the heat.

Before serving, the most important thing is to add a few drops of balsamic vinegar (this will not only remove the fishy smell, but also make the fish meat more fresh and fragrant), mix well, and then serve.

5. Stir-fried fresh fish fillet

1. Materials

Half an egg white, half a teaspoon of salt, a little pepper, half a teaspoon of starch, 1 tablespoon of cooking wine, half a teaspoon of salt, half a tablespoon of water starch, a little sesame oil, and 3 tablespoons of water. 300 grams of grouper meat, 10 pea pods, 1 red pepper, 1 yellow pepper.

2. Method

Slice the fish, mix with seasoning (1) and marinate for 10 minutes;

Wash and split the red and yellow peppers, remove the seeds and chop them, remove the old tendons from the pea pods, wash and set aside;

Fry the grouper fillets in oil, remove from the oil, and stir-fry the red and yellow pepper slices in 2 tablespoons of oil, then add the pea pods;

Mix the seasoning (2) and pour it into the pot. Add the fish fillet and stir-fry until evenly mixed. Serve immediately.

Key Tips

Grouper has few bones and thick meat, making it most suitable for stir-fried fish fillets. It can be bought in supermarkets or vegetable markets. In addition to grouper, snapper fillets can also be used.

The temperature of the oil for frying the fish fillets should not be too high to prevent the fish meat from sticking together.
