1. Let’s make the white dough first. Mix the bean curd, white flour and yeast powder.

2. Then make the purple sweet potato dough, white flour, bean dregs, purple sweet potato flour, and yeast powder.

3. Mix the two doughs separately, add appropriate amount of warm water, and let them become smooth dough.

4. Cover with a wet cloth or place in a warm place and ferment for half an hour until it becomes a honeycomb shape, as shown in the picture.

5. Knead the two fermented doughs again and divide them into small portions.

6. The white dough is slightly larger than the purple dough. Wrap the purple dough into the white dough and use the purple dough as the filling for the buns.

8. Put the steamed buns into the steamer one by one and let them rest for 10 minutes.

9. Steam in cold water for 25 minutes. After turning off the heat, simmer for two minutes with the lid on.

10. After opening the lid, take out the steamed buns immediately and place them on the grate to return to temperature.
