How to cook small yellow croaker with Hunan flavor

1. Remove the internal organs of the small yellow croaker, clean it and wipe off the moisture. Chop the onion into chopped green onion, chop the ginger into small cubes, and chop the garlic into slices.

2. Marinate the small yellow croaker with 10 grams of salt, 1 tablespoon of light soy sauce and 2 tablespoons of rice wine for 15 minutes.

3. After the fish is marinated, wipe off the moisture and apply a thin layer of cornstarch on the fish body.

4. Put a frying pan on the fire, add more oil and heat it to 60% hot, put the small yellow croaker in it and fry until browned. You can also fry it in a frying pan until both sides turn golden brown.

5. Heat another pot, leave about 15ml of oil in it, add ginger, garlic and chopped pepper when it is 70% hot and stir-fry until fragrant.

6. Then add tomatoes and continue stir-frying until red oil comes out.

7. Pour in the fried small yellow croaker and hot water to slightly cover the fish.

8. Add one tablespoon of dark soy sauce, one tablespoon of light soy sauce, and 3 grams of white sugar. Turn to high heat, cover and simmer for 3 minutes. During this time, be sure to turn the fish over to avoid burning the pan.

9. Remove from the pan when the sauce is reduced and sprinkle with chives. Let’s eat! I ate three bowls of rice in a row!
