How to make black-faced mutton dumplings

1. Peel and shred the carrots.

2. Chop the carrots into small pieces (if you want to eat them soft, blanch them in water) and chop the green onions. (Meat, carrot, onion according to 2:1.5:1)

3. Wash the leg meat

4. Slice thinly, cut into thin strips, cut into small dices, and then chop (this way chopping the meat will not be too difficult)

5. Put the chopped meat and vegetables together, add salt, sesame oil, white pepper, chicken essence, stir evenly, (remember to stir in one direction, forgot to take a photo), mix the dough, put it in a bowl, cover it and let it rise (forgot to take a photo), then make dumplings, (because I did it all by myself, so I forgot to take several photos.)

6. Pour water into the pot and bring it to a boil over high heat. Then change to medium-high heat and pour in about 40 dumplings (more dumplings will not boil over). Then use a slotted spoon to scoop out the bottom and stir slowly. Cover the pot (if you don't wait for the pot to boil, don't cover it or it will burst). When the pot boils, pour a bowl of cold water in, cover it, and repeat three times.

7. Fish it out!

8. Add some balsamic vinegar and enjoy!
