14. Start rolling from the wide end and brush a little egg liquid on the tip.

15. Roll it up, seal it downward, put it on the baking tray, cover it with wet and wrung gauze, and let the dough ferment.

16. Ferment at room temperature of more than 20 degrees for about half an hour. When it is twice as large as the beginning, you can brush it with egg liquid. At this time, preheat the oven to 190 degrees for 5 minutes

17. Finally, preheat the oven to 190 degrees, bake for 15 minutes, and the crispy and tender croissants are ready.
