How to cook bitter melon

If we want to make bitter melon delicious, we should choose the cooking method according to our taste. Bitter melon can be used for stir-fried meat and eggs, or for making soup. If we want to keep it simple, we can buy spare ribs and make soup with bitter melon. As long as we prepare the spare ribs, and then put the spare ribs and bitter melon in clear water and simmer for 1 hour, we can have a delicious bitter melon spare ribs soup.

1》Stir-fried bitter melon

Material:

3 bitter melons, 2 shallots

Seasoning:

1/2 spoon salt, 1/2 spoon MSG, 3 spoon sugar, 1/3 spoon sesame oil

practice:

1. Wash the bitter gourd and cut it in half lengthwise to form two semi-cylinders.

2. Place the half-cut bitter melon upside down on the chopping board. Note: When you cut it into slices with a knife, be sure to cut it diagonally, the more oblique the better, so that the skin and flesh of the bitter melon are basically on the same plane.

3. Cut the shallot into sections, put into the oil pan and stir-fry until fragrant, then add the bitter gourd and stir-fry quickly. At the same time, add salt and sugar. After stir-frying for about 1 minute, add MSG, stir-fry for half a minute, turn off the heat, drizzle with a small amount of sesame oil, and serve.

Tips:

1. When stir-frying green vegetables, use more oil and use a stronger fire so that the dishes will taste good.

2. Cut the bitter melon diagonally to expose the flesh so that the sugar flavor can fully penetrate into the bitter melon flesh and neutralize the bitterness.

3. When cooking this dish, you need to add more sugar so that the bitter gourd is not bitter and has a sweet taste with salt.

4. When stir-frying bitter melon, you must control the heat well. Generally, the time from putting the food into the pot to removing it from the pot should not exceed 4-5 minutes. Bitter melon tastes better when it is a little raw. Generally, the best color is emerald green when it is 70% cooked. If it is stewed too much, it will lose its crisp feeling and taste a little bitter.

2》Bitter melon stuffed with meat

Material:

1 bitter gourd, 300g minced meat, 50g carrot, 1 green onion, 1 piece of ginger, some coriander;

Seasoning:

1 tablespoon each of soy sauce and starch, a little salt and sesame oil.

Preparation method:

1. Wash the bitter gourd, cut into 2 cm rings, and remove the seeds; peel and mince the carrots and ginger; wash and mince the green onions; put them all in a bowl, add the minced meat and seasonings, mix well, fill the bitter gourd, and serve on a plate.

2. Pour proper amount of sesame oil into the pot and heat it, sauté the minced ginger, add proper amount of water and bring to a boil, pour it on the bitter gourd, then put it into the steamer with the plate and steam for 15 minutes, then take it out and sprinkle with chopped coriander.

3》Bitter Melon and Sea Bass Casserole

raw material:

150g bitter melon, 150g sea bass, 25g carrot

Seasoning:

Appropriate amounts of salt, MSG, cooking wine, broth, pepper, and cornstarch, and one egg white.

practice:

1. Wash the sea bass, remove the bones, and slice it into slices; wash the bitter gourd, remove the seeds, and cut it into oblique slices for later use; wash the carrots, cut them into large slices for later use; coat the sea bass slices with cornstarch, egg white, salt, cooking wine, and MSG, and mix well with a little cooking oil.

2. Heat up a pan with oil, put the fish fillets, bitter gourd and carrots into the pan and coat them with oil, then remove them from the pan and drain the oil.

3. Add appropriate amount of broth to the original pot and season with the above-mentioned seasonings, add fish slices, bitter gourd, and carrot slices, stir well, thicken with water starch, drizzle with appropriate amount of cooking oil, put into the hot pot and serve.

4》Bitter Melon with Chinese Wolfberry

Wash the bitter gourd, cut it in half, remove the seeds and white membrane, and blanch it in boiling water; wash the wolfberries and set aside. Heat the oil in a pan, add bitter melon, soy sauce and water into the pan, and simmer over low heat until the flavors are absorbed. Before serving, add wolfberry and stir-fry.

5》Bitter Melon Fried Eggs

1. Remove the core of bitter gourd and cut into thin slices. Rub with a little salt, marinate for 15 minutes, then blanch in boiling water;

2. Beat 3-4 eggs evenly and add a little salt;

3. Add oil to the pan, fry the bitter melon first, then pour in the egg liquid and fry both sides until cooked.

6》Five-flavor bitter melon salad

Slice the bitter gourd, blanch it with boiling water, take it out, mix it with a little salt, vinegar, sugar, MSG, chili oil, and pepper oil. You can also add a small amount of fresh soy sauce ("Maggi" tastes best), and then you can eat it. It has all five flavors, sour, sweet, bitter, spicy and numb. It is one of my favorite foods in summer to relieve heat and thirst.
