How to make crystal osmanthus cake?

1. Ingredients: 20g gelatin powder, 500g water, 10g sugar osmanthus, 40g coconut milk, 25g light cream, 20g sugar

2. Dissolve and stir

Place 10 grams of gelatin powder in two containers and add 50 grams of cold water to each container to dissolve. Then heat over low heat and stir until the gelatin powder is completely dissolved, then turn off the heat. Add 20g of sugar to one portion of gelatin liquid and mix well.

3. Add water

Then add 200 grams of warm water, 40 grams of coconut milk and 20 grams of light cream and mix well.

4. Gelatin liquid

Add another portion of gelatin liquid to 200 grams of warm water, then add 10 grams of sugar osmanthus and mix well. Then filter out the osmanthus flowers and save them for later use.

5. Measuring cup

To ensure that each layer is uniform, use a measuring cup and inject equal amounts into each layer, depending on the amount of your container. I injected 100ml into each layer. In order to facilitate demoulding, I used a bottomless square mold, wrapped the bottom with plastic wrap, and placed it on a plate. You can also put plastic wrap in a glass container. First pour the white coconut milk into the bottom layer, then put it in the refrigerator for twenty minutes.

6. Freeze

Pour the transparent osmanthus liquid layer into the mold with one layer frozen already. (Make sure the osmanthus liquid is cool, otherwise the frozen coconut milk layer at the bottom will melt when heated) Then put it in the refrigerator for twenty minutes. Then repeat this process several times according to the required number of layers.

7. Surface layer

Take an equal amount of osmanthus liquid as mentioned above, add the osmanthus flowers just filtered out, pour it on the top layer as the top layer, and distribute the osmanthus flowers more evenly. Then refrigerate for four hours or more.

8. Demolding

It is easier to demould the glass container covered with plastic wrap. Just take out the plastic wrap and osmanthus together. Okay, cut into pieces and eat. It tastes delicious when drizzled with osmanthus honey!
