After loosening the beef tenderloin with the back of a knife, slice it horizontally and then cut it into beef strips. Add appropriate amount of sugar, cooking wine, white pepper powder, spicy seasoning and some water and rub them evenly with the beef to massage the beef. Use your hands to grab the meat until all the cooking wine is absorbed into it, then add a little oil and mix well. Add a little egg liquid and dry starch to make it sticky without water, then add appropriate amount of oil to mix evenly to lock in the moisture. When the temperature reaches about 150 degrees, add the beef strips. When it turns slightly yellow, take them out and place them in a colander to drain the oil. Raise the oil temperature to about 180 degrees and fry again. Leave a proper amount of base oil in the pot, first add the Sichuan peppercorns and Sichuan peppercorns and fry until fragrant, then fry the chili peppers until dark reddish brown and spicy, then add the fried beef strips, sprinkle with proper amount of sugar, salt, and chicken essence for seasoning, then sprinkle with proper amount of cooked sesame seeds, and stir-fry evenly. 3. Cut the beef into small pieces, add onions, peppers and star anise, put them in water and boil for a while. This will make it easier to cut into strips and more fragrant. Take out and cut into strips, pour all the seasonings into the meat strips and mix well. Put it in a pot and cook over low heat until the water is almost dry. Take it out and place it on the grill in strips, you can cover it with baking paper first. Turn the oven to the lowest setting, 60 degrees, with upper and lower fire, and bake for about 1 hour.
