1.1 Put the purchased minced meat (did I tell you that I have hardly ever chopped minced meat myself since I was a child? I’d better wait until I live in a villa before chopping it, otherwise the neighbors will knock on the door when they come back) in a large bowl, slowly pour in the scallion and ginger water in portions and stir until the juice is fully absorbed. Stop when you feel it’s almost done (my meat filling was a little wet, so it was sticky when shaping it). Add half of the egg white, mix well, cover and set aside.

3. Prepare lotus root cubes. Use a knife to grind the purchased lotus root into small cubes. If it can be the size of mung beans, it will be just right. If not, soybean size is also fine.

4. Pour the diced lotus root into the minced meat and mix as well as possible with chopsticks. Then add some salt, soy sauce, black pepper, five-spice powder and other spices you like, mix well, then add corn starch, stir vigorously in one direction until it becomes viscous

6. Heat the pan with cold oil, fry slowly over low heat until one side is brown and slightly hard, then turn over and fry the other side. When cooked, drain the oil, serve and sprinkle with a little chopped green onion.
