How to make hot and sour sweet potato jelly

1. Water: sweet potato starch = 4:1. Use 150CC of water to dissolve the sweet potato starch into water starch without particles.

2. Pour the melted starch into the pot, add 450CC of water, stir well and simmer on low heat. (Be sure to stir constantly during the process to avoid sticking to the pot)

3. Cook until the starch becomes viscous and changes color completely.

4. Pour the cooked starch paste into a container and let it cool or put it in the refrigerator.

5. After cooling and forming, take it out and cut it into thin strips, small pieces or other shapes with a knife or a grater.

6. Place on a plate and set aside.

7. Chop the onion and garlic into small pieces and set aside

8. Put some oil in the pan and add minced garlic to fry until the garlic smells. Turn off the heat.

9. Pour into the bowl with green onions, add cold vinegar, light soy sauce, salt, sugar, chicken essence, chili oil and pepper powder and mix well.
