If the sugar liquid can immediately solidify into relatively solid small sugar beads, it means that the temperature is enough.

3. The temperature of boiling sugar must reach 140 degrees, but it can't be too high, otherwise~~ if the temperature is not enough, the nougat will be too soft and not formed; if the temperature is too high, it will taste too hard

4. Crack an egg in advance and separate the egg white and yolk. When the temperature of the sugar reaches about 130 degrees, you can beat the egg whites until they are stiff and foamy. That is, when you lift the egg beater, there will be a triangular tip that does not fall or tilt.

5. After the egg whites are beaten, the syrup should also be boiled to 140 degrees. At this time, quickly pour in the boiling hot syrup and stir quickly with an electric whisk.

6. Keep stirring until you feel the whisk is struggling to turn.

7. Pour in pistachios and mix well
