How to make caramel pear liqueur jelly

1. Soak the gelatin powder in cold water and put it in the microwave for 1 minute until the color is transparent. Put the milk in the microwave for 2 minutes until the temperature reaches above 85 degrees. Put 15 grams of fine sugar in a bowl, pour in the beaten egg yolk and stir evenly.

2. Take another pot, add 15g of fine sugar and 15ml of water, put it on the stove, turn on low heat and stir with a wooden spatula

3. Stir-fry until the color turns light brown and remove from heat

4. Pour in the milk and mix well (note that the temperature of the milk must be high, and stir while adding, otherwise the sugar will clump), then add step 1 and mix well, finally add 2/3 of the fish glue, stir evenly, and put it in the refrigerator to cool for 5-10 minutes. If you can't control the time well, take it out and stir it every few minutes. If it becomes a paste, it's fine. If the cooling time is too long and it becomes jelly-like, then you can't add cream.

5. While the milk paste is cooling, use a whisk to beat the fresh cream until it is 6-7% distributed (if the fresh cream is refrigerated, it can be whipped directly. If it is at room temperature, it needs to be placed in ice water to be whipped)

6. Take the condensed milk paste out of the refrigerator and add whipped cream

7. Stir well

8. Pour into glasses, filling each 50% full, and place in the refrigerator for 1 hour to make caramel jelly.

9. Add the remaining isinglass to the sweet wine and mix well. Place in the refrigerator for 1 hour. Take it out and mash it with a spoon. Spoon it on the caramel jelly. Finally, garnish with pear slices and mint leaves.
