Spicy smoked fish recipe

1. Cut open the grass carp you bought, remove the internal organs, scales, fins and tail from the belly. Until the fish becomes a fish stick.

2. Wash it clean and set it aside until all the water on the fish dries up. After about an hour, use a clean towel to absorb any remaining moisture from the fish and its belly. These two steps of drying out the fish are important, as water is the culprit that causes the fish to fall apart during the cooking process. Chop the fish into small pieces, discarding the fish head.

3. Add minced ginger and salt to marinate the fish pieces, one is to make it flavorful, the other is to remove the fishy smell. The reason for pouring the fish from the basket into the pot is to make it easier to mix the fish with minced ginger and salt. After mixing, pour the fish pieces back into the basket.

4. Marinate the fish aside and start preparing a special seasoning. A lot of ingredients are needed: minced ginger, chopped green onion, soy sauce, vinegar, sugar, MSG, pepper oil, and chili oil. Of course, the picture only tells you what seasonings are there, and the amount is not for reference. After reading the whole step, you will understand roughly how you need to season.

5. After the fish pieces have been marinated for 6 hours, you can start frying them. Put the fish pieces into the boiling oil. Do not keep turning the fish pieces in the pan, as this will easily break them.

6. After both sides are fried into golden brown, you can put the fish pieces in the pan directly into the prepared seasoning bowl. At this time, the fish pieces will continue to bubble and make sizzling sounds, which means the fish pieces are absorbing the flavor of the seasoning. This is the true meaning of "smoked fish".

7. While the fish pieces are being seasoned in the seasoning bowl, a new round of frying fish pieces starts on the other side. When the new batch is almost done, the first batch can be taken out of the seasoning bowl and placed on a plate.
