This kind of vermicelli is a specialty of Heilongjiang ╮(╯_╰)╭soak in water for 10 minutes and set aside~Tear the eggplant into small pieces and soak in water for later use. Add a little salt to kill the water. This will save oil~~Otherwise, eggplant absorbs too much oil. If you don’t mind getting fat, you don’t have to worry about it………

Prepare chopped green onion and garlic, heat the pan with cold oil, add the minced garlic and green onion, then start cooking the eggplant. Squeeze out the water from the soaked eggplant and put it into the pan (don't throw it in too much, or it will get oily)... After putting it in, start frying.
