How to make coated tofu?

Coated tofu is actually pressed tofu. Only after this step is completed will the tofu be square, which is convenient for transportation and further processing. It is actually not very difficult to make tofu with coating. The difficulty lies in the production of the tofu. If the marinating process is not done well, there will be problems in the molding process of the tofu, which will directly affect the subsequent production process.

How to make tofu

1. Select fresh soybeans and sieve them using dry sieving method or water sieving method to remove impurities such as sundries, inferior beans, plants, sand and soil.

2. Soak the soybeans in water to remove impurities floating on the water surface. The amount of water should be enough to submerge the soybeans. During the soaking process, prevent the water from becoming sour and rancid, which will affect the quality of soy milk. Change the water once in time according to the specific situation. The soaking time varies according to the temperature. Generally, the beans are soaked for 4-6 hours in summer; it can be extended to 9-12 hours in winter.

3. Grinding: Add the soaked beans into the grinder in several times, adding soybeans and water at the same time, and grind them into soy milk paste. Generally, 0.5 kg of soaked beans are added with about 0.5 kg of water. When grinding, add beans and water evenly and coordinate with the grinding speed. Only in this way can delicate and smooth soy milk be ground out.

4. Filter the soy milk. Generally, use filter cloth or flour bag to filter. Add 5 kg of ground soy milk paste (equivalent to 1 kg of dry soybeans) into 2.5 kg of warm water at about 20°C. Stir evenly and put it into the cloth bag. Hang up the cloth bag and shake it by hand until the slurry flows out. Repeat the operation 3-4 times until the slurry is drained.

5. Boil the soy milk: Put the filtered raw soy milk into a pot, heat it over high heat to boil (or heat it with steam) until the foam on the surface of the pot bursts, then turn off the heat to get cooked soy milk.

6. Gypsum powder is generally used as a solidifying agent for slurry application. About 10 grams of gypsum is required for 1 kg of dry soybeans. Method of making soy milk: scoop the boiled soy milk out of the pot and let it cool slightly. When the temperature drops to 80℃, you can make soy milk. When coating the soy milk, use a small spoon to stir the soy milk forward continuously and slowly add gypsum water. When the soy milk sticks to the spoon, slow down the stirring and the speed of adding gypsum water accordingly. When corn-sized tofu particles appear in the soy milk, stop stirring, cover the pot, and keep it for about half an hour before starting the coating process.

7. Patina: Patina means pouring the tofu pudding into a wooden grid covered with cotton cloth, wrapping it, and pressing it with a heavy object to squeeze out the water. Generally, it cannot be pressed too dry. If you are making dried tofu, you can press it until no water drips out. Tofu has a long history.

Processing method of swimming tofu:

Soak the soybeans, grind them, filter them, and boil them, then add a small amount of brine to make the tofu protein coagulate into "flowers". Then put the tofu into a wooden frame and press out excess water to make tofu. The tofu made by this method is more tender and less rough than the tofu made with gypsum. Floating tofu can also be made into dried tofu, chili fermented tofu, and fried tofu, which are rich in nutrition and consumed in large quantities.
