How to make fermented rice cake

Many people like to eat fermented glutinous rice. Although it contains a certain amount of alcohol, the degree is relatively low. It is said that it can be made into fermented glutinous rice cake, which is popular with many people. Fermented glutinous rice can be purchased in the supermarket, or you can brew it yourself. Prepare an appropriate amount of glutinous rice flour and fermentation yeast, and then you can make fermented glutinous rice cake.

How to make rice cake with fermented glutinous rice

Ingredients: 300g rice flour, 30g sugar, 300g fermented rice, 30g water, 4g yeast, some dried cranberries

1. Prepare the fermented glutinous rice. I bought it from the supermarket. The flavor of the fermented glutinous rice is not very strong. Interested friends can make it by themselves.

2. Use a food processor to blend the fermented glutinous rice into paste.

3. Weigh the glutinous rice flour and put it in a larger bowl, add glutinous rice paste, sugar, and yeast dissolved in warm water, and stir with chopsticks into a paste.

4. Pour the mixed batter into a piping bag and squeeze it into the mold (brush the mold with a layer of oil in advance and refrigerate it in a refrigerator so that it can be easily demolded). Pick up the mold and tap it vertically a few times to make the surface of the batter smooth. Then sprinkle some dried cranberries on the surface (chopped cranberries in advance). You can also use a bowl if you don’t have a mold.

6. Cover the mold and let it ferment until it is 1.5-2 times larger. Put it in a pot with cold water and steam it for 25 minutes. After turning off the heat, simmer for 3 minutes before opening the pot. After it cools down, use chopsticks to circle around the mold and turn it upside down to remove the mold.

Ingredients: 330g water, 75g sugar

Accessories: half a spoon of yeast, appropriate amount of dried osmanthus, appropriate amount of dried rose petals, appropriate amount of dried red dates Steps 1. Mix rice flour + water + white sugar evenly, heat in the microwave for 2 minutes, and stir once in the middle 2. After cooling, sieve and add yeast powder and fermented rice, mix well, and ferment overnight (more than 9 hours) at room temperature (26°C) 3. Oil the mold and pour 80% of the rice slurry into it; sprinkle dried osmanthus, rose petals or dried red dates on the surface 4. Put it in a steamer, boil water over high heat and steam for 20 minutes, turn off the heat and simmer for 5 minutes, and serve after cooling.
