1. Chop the pig's trotters into pieces. You can ask the store to do it for you when you buy it. Pour clean water into the pot, add cooking wine, scallion segments, peppercorns and star anise, then blanch the pig's trotters and set aside.

9. Add pig's trotters and dry chilies and stir-fry to enhance color and spiciness.

10. Add appropriate amount of hot water and simmer over medium heat until the sauce thickens.

11. Pour in hot water for the second time.

12. Cook over high heat until the sauce thickens.
