1.1. Remove the scales and gills of the fish, clean the internal organs, and cut off the dorsal and ventral fins;

2.2. Marinate with salt, cooking wine, ginger slices, scallions and sweet rice wine;

3.3. Cut the dried chili into small pieces; mix soy sauce, sugar, MSG and vinegar to make a sauce;

4.4. Heat vegetable oil in a pan until 70% hot, add fish and fry until golden and crispy, remove from the pan and drain the oil;

5.5. Place the ginger slices flat on the pot;

6.6. Place the fried fish neatly on the ginger slices;

7.7. Add scallion segments and garlic cloves;

8.8. Pour in the sauce;

9.9. Add some water to the fish and turn on high heat;

10.10. After the water boils, cover the pot, turn down the heat and simmer for 40 minutes;

11.11. After 20 minutes of stewing, open the lid, turn the fish over, and continue stewing;

12.13. Serve on a plate and sprinkle with some chopped green onions.
