Sesame leaf tofu soup recipe

Material:

Fresh mushrooms, tofu, olive oil, onion, ginger, soy sauce, vinegar, sugar, chili oil, pepper, water starch, eggs, sesame oil, chicken stock

practice:

1. Wash the fresh mushrooms and cook in boiling water for 2 minutes. 2. Cut the tofu into small pieces and soak them in light salt water for 10 minutes. 3. Add olive oil to the pan, sauté scallions and ginger, then pour in the shredded mushrooms and stir-fry. 4. Add appropriate amount of boiling water, light soy sauce, balsamic vinegar, a little sugar and chili oil. 5. After cooking for 3 minutes, add tofu, pepper powder, and appropriate amount of salt, thicken with water starch, pour in egg liquid and mix well. 6. Finally, add a little chicken essence, drizzle in sesame oil, sprinkle with chopped green onions and serve.

1. The protein content is high and the quality is better than the protein in grains and close to the protein in meat. The protein content of soybeans is about 40% (lean pork contains 16.4% and eggs contain 14.7%). The amino acid composition of bean protein is close to the needs of the human body, and its composition ratio is similar to that of animal protein. Among them, lysine, which is relatively lacking in cereal foods, is found in higher concentrations in beans. Therefore, it is advisable to eat it with cereals to increase the physiological value of protein in the diet. 2. The fat content is relatively high, reaching 15%-20%, among which soybeans and black beans have the highest content and are often used as raw materials for edible oils. Soybean oil is one of the most commonly used cooking oils. 3. Zero cholesterol. Soybeans are plant-based and therefore contain no cholesterol. Soybeans are the only food that has high-quality protein and little (or no) cholesterol. This is one of the reasons why soy protein is healthier than meat protein.

4. Rich in calcium, coupled with the coagulant added during the processing, the calcium content of soy products is very prominent. The calcium content of 250 grams of tofu is equivalent to that of 250 milliliters of milk. If milk and dairy products are the first choice for calcium supplementation, then soy products are undoubtedly the second. 5. Contains B vitamins, especially vitamin B2. 6. Rich in elements such as phosphorus, sodium and potassium, it is a good source of minerals.
