1. Wash and remove the stems of fresh king oyster mushrooms and shiitake mushrooms, cut into small dices for later use. Soak the dried shiitake mushrooms in water in advance, keep the soaking water, remove the stems and dice them. Soak peach gum for 12 hours in advance and cut into small pieces for later use

2.1 Heat up a pan and add 2 tbsp oil, add ginger, star anise and chili and stir-fry over low heat until fragrant, then add the chopped king oyster mushrooms and dried and fresh shiitake mushrooms and keep stir-frying until the mushrooms release water, then stir-fry for a while, add the soaked peach gum and stir well, add a bowl of the water used to soak the shiitake mushrooms, and add an appropriate amount of water to just cover the vegetables in the pan. Then add rock sugar, dark soy sauce and light soy sauce, stir well, and simmer over low heat for 20 minutes to half an hour (stir from time to time to prevent sticking to the pan). Taste and add a little salt according to the situation. Heat high heat to reduce the sauce, but don't let it dry out. Leave some sauce for rice, then turn off the heat for later use.

3.2 Because dried shiitake mushrooms contain impurities, the water used to soak the mushrooms needs to be filtered or left to settle. The top part can be used everywhere, and the part with impurities should be thrown away.

4. Wash the rapeseed, boil water in a pot, add a little salt, blanch the rapeseed for 30 seconds, remove and rinse with cold water, then drain and set aside
