How to make braised pork with soybean paste

1. Wash the pork belly, cut it into mahjong-sized pieces, add 1 teaspoon of salt, mix well and let it stand for 30 minutes.

6. Add glutinous rice wine and dark soy sauce, stir well. Don't get the order wrong, add the wine first and then the dark soy sauce. If you are using cooking wine, add the cooking wine first, then 1 tablespoon (15ml) of sugar, stir well and then add soy sauce.

7. Add the fermented bean curd with soy sauce. If you like the softer kind, you can add the fermented bean curd after the meat is cooked to 60% to 70% (about 40 minutes).

8. Put the meat and tofu into a non-cooking pot, add a small bowl of water, bring to a boil and then cook for 5 minutes. If you don’t have a no-cooker pot, just add water to cover the meat by 1 cm, bring to a boil over high heat and then simmer over low heat for 1 hour.

9. After cooking, put it into the outer pot, fasten the lock, and simmer for an hour.

10. After simmering, transfer to a wok and cook over high heat until the sauce is reduced. If you simmer it directly in a wok, the soup will start to thicken after about an hour. Still use high heat to reduce the sauce, stirring constantly with a spatula.

11. Cook until the soup is very thick and evenly coat the meat and tofu. You can add some chicken essence to stir-fry and season before serving, but you can also leave it out.

The steps of braised pork with fermented soybeans are simple, but to do it well, you still need to try and practice seriously. Although the method is important, understanding is more important. Only by truly understanding can you make delicious food.
