1.Cut off the whiskers of fresh shrimps.

2. Prepare green onion, ginger and coriander.

3. A little starch and two eggs.

4. Peel and devein the shrimp.

5. Chop into shrimp paste and set aside.

6. Add one egg white, cooking wine, salt, sesame oil, chopped green onion, ginger, coriander, starch and pepper to the shrimp paste.

7. Stir in one direction until it becomes firm.

8. Add the starch, remaining eggs and a little salt and mix well so that there are no lumps.

9. Put it into the pan in batches and spread it into omelets for later use.

11. Garnish with chive leaves and serve.

12. Put it in the pot and steam it over high heat.

13. Remove from the pan, cut and place on a plate.
