1. Put the clean brown rice into the pot and turn on low heat.

2. Stir fry continuously.

3. Stir-fry until fragrant and the color becomes more yellow.

4. When the edges turn slightly yellow-brown, it means it’s done.

5. Keep turning the fried brown rice to help dissipate heat.

6. Pour the cooled brown rice into the food processor.

7. Please do not pour it into an ordinary juicer. It needs to be poured into a food processor with dry blending function. Ordinary juicers cannot be used for dry blending.

8. Beat the brown rice into coarse-grained rice flour. It does not need to be into fine powder.

9. Add 1/2 spoon of salt and mix well.

10. Add pepper powder and mix well for use when wrapping (add both white pepper powder and black pepper powder).

11. Add minced garlic to the ribs and pork.

12. Add oyster sauce, light soy sauce and dark soy sauce and mix well.

13. Add a little white pepper and black pepper.

14. Add sugar, mix well and marinate for 40 minutes.

15. Put the prepared Lipu taro into a plate (it must be Lipu taro, as it has purple flocs inside when cut horizontally, while ordinary taro is light yellow. The two taste completely different, and the choice of taro is crucial for making any dish with "taro flavor").

16. Wrap the marinated pork belly with the prepared rice noodles.

17. Don’t take out the wrapped meat yet. The moisture in it will seep out and continue to be coated with flour, so don’t take it out too quickly.

18. After coating the pork chops and pork belly with flour, let them cool for three minutes.

19. First place the ribs on the prepared Lipu taro.

20. Place the pork belly on top.

21. Leave it for about 5 minutes. If you look at the color, you will understand why I said to leave it for 5 minutes first. At this time, the flour will have adhered to the meat very well, and after steaming, they will definitely not stick together. Each piece and each slice will be separate.

22. At this time you can put it in a rice cooker, a pressure cooker, or a steamer to steam it. The steaming time varies according to the meat texture you want and the pot you use, so don't take the given time as a standard. I use a high-power electric steamer from a hotel, 30 minutes. If it is a home steamer, the rice cooker must extend the time, and if it is a pressure cooker, shorten the time.
