Mango Blueberry Roll Recipe

1. Heat the butter until it melts and set aside

2. Separate the egg yolk and egg white and put them in a container. Add fine sugar to the egg yolk.

3. Use a whisk to stir until the sugar is completely dissolved and becomes a fine egg yolk paste. Continue stirring until the color becomes lighter and thicker.

4. Pour fine sugar into the egg whites all at once, and beat with an electric whisk until coarse bubbles appear. After continuous beating, the volume becomes larger but still flows. Continue beating until the whisk stops flowing when you lift it, and there are obvious lines. The egg white paste on the head of the whisk has short, curved corners. This is a fine egg white paste.

5. Take one-third of the egg white paste and add it to the egg yolk paste. Mix it gently with a rubber spatula. Then add it to the rest of the egg white paste and continue to mix it gently from the bottom up with a rubber spatula.

6. Sift the low-gluten flour into the egg mixture three times, and stir gently in the same way until it is completely absorbed and mixed without any particles.

7. Pour a small amount of batter into the melted butter and mix quickly.

8. Pour it back into the original batter and mix from the bottom up until it is completely mixed.

9. Pour into the baking tray, use a small scraper to smooth the surface, gently shake the baking tray to eliminate the bubbles on the surface, and put it in the preheated oven at 160 degrees for about 12 minutes until the surface turns golden brown

10. After the cake is out of the oven, move it to the baking rack, tear off the wax paper on the four sides, let it cool down a little, then place a piece of wax paper larger than the cake body on the surface of the cake, and turn the cake over (i.e. the colored side of the cake faces up)

11. Spread a layer of blueberry jam on the cake, leaving 1cm around it.

12. Use a knife to cut off a piece of cake at one end of the cake body to make it easier to roll it up and glue it together.

13. Peel and cut fresh mango into small pieces

14. Place the mango pieces on the cake with blueberry jam, put a rolling pin under the wax paper, slowly roll it forward to cover the cake, refrigerate for 30-40 minutes, and when the cake roll is set, cut the head and tail neatly.
