1. Big Pot Mutton Soup

Ingredients: water, mutton, mutton offal, skeleton, spicy oil, minced garlic

1. Chop the bone-in lamb ribs into 3 cm wide sections.

3. Put cold water in a large pot and place it on the fire. Immediately put the chopped meat into the pot of cold water. Bring to boil over high heat.

4. Use a spoon to skim off the dirty foam on the surface of the clean soup. Catch more frequently.

5. After removing the foam, simmer over low heat.

6. After about 1 hour (can be longer), the mutton is cooked.

7. Sprinkle enough salt and pepper at one time and pour into a large bowl after 1 minute. Place cilantro on the surface of the soup in the bowl and serve.

Key point: Salt must be added last, mainly to give the soup flavor. You cannot use hot water at the beginning, you must use cold water to cook the meat.

2. Mutton and Winter Melon Soup

Ingredients: 150 grams of mutton, 150 grams of clean winter melon, salt, MSG, pepper water, Shaoxing wine, pepper powder, shredded green onion, shredded ginger, coriander, lard, and broth.

Wash the mutton and cut it into small thin slices. Peel and seed the winter melon and cut it into rectangular thin slices. Blanch it in boiling water. Cut the coriander into 8 cm long pieces.

2. Put broth, winter melon, salt, pepper water, Shaoxing wine, MSG, and pepper powder into the pot and boil over high heat;

3. When the soup boils, put the mutton, scallion, ginger and coriander into the pot, bring to a boil, add a little pork fat, immediately serve in a bowl, and the mutton and winter melon soup is ready.
