How to make homemade Liangpi

You can give yourself happiness, you can cook something delicious for yourself. If you don’t know how to cook, you need to learn first. Well, now I will teach you how to make your own cold noodles at home.

1. Take one and a half bowls of flour.

2. Add about a bowl of cold water, add the water little by little, and knead it into a smooth dough of moderate hardness.

3. Cover with lid and let rise for about 30 minutes.

4. Pour two bowls of clean water into a basin, knead the dough with your hands, wash out the white flour paste, and pour it into another basin. (This is the first time)

5. This is the second time kneading the dough.

6. This is the third time kneading the dough.

7. This is the fourth time kneading the dough.

8. This is the fifth time kneading the dough.

9. Repeat this process 6 times, adding two bowls of water each time, until the white dough cannot be washed out.

10. The remaining dough is gluten.

11. Use a dense colander to filter all the washed batter into a bowl.

12. Cover with plastic wrap and place in refrigerator to let it settle for at least 3 hours. (I took it out overnight)

13. While the dough is resting, steam the gluten over high heat.

14. After about 20 minutes, turn off the heat when the gluten is cooked.

15. Take out the gluten and let it cool.

16. After the gluten has cooled, cut it into dices and set aside.

17. Take out the dough that has been rested and return it to room temperature. Then slowly pour out the clean water on top. It is not necessary to pour out all of it. Just leave the clean water at a height as thick as your little finger.

18. Then mix the remaining batter evenly.

19. Take two other metal plates, rub a thin layer of oil on the bottom of the plate and use them alternately. Scoop half a spoonful of batter into the plate and stir evenly. It is best to make it a thinner one.

20.Put water in a pot and bring it to a boil. Place the plate on the boiling water for 15 seconds.

21. When the surface is about to solidify, cover with lid and simmer for about 1 minute.

22. When the batter inside starts to bubble, remove the lid.

23. Take out the dish and place it in prepared cold water to cool.

24. Then gently peel off the cold skin from the plate.

25. Stack the peeled cold skin neatly on a plate.

26. Mash the ginger and garlic into a paste.

27. Chop chives, coriander and peanuts

28. Prepare one spoonful of sesame paste in advance with one spoonful of sesame oil and two spoonfuls of homemade pepper oil.

29. Cut the cucumber into shreds as the base.

30. Cut the cold noodles into thumb-width strips and place them on the cucumber shreds.

31. Make the sauce: add sesame paste prepared in advance, three spoons of red chili oil, one spoon of pepper powder, half a spoon of sugar, two spoons of ginger and garlic paste, four spoons of soy sauce, two spoons of vinegar, one spoon of homemade pepper oil, and one spoon of MSG to make the sauce

32. Then sprinkle the cold skin with crushed peanuts, gluten and green onions.

33. Pour the prepared sauce onto the cold skin and sprinkle with fish parsley.

34. Mix well before eating.

Although it is very simple to make homemade cold noodles at home, if you have never cooked and don’t understand, you might as well ask your elders for help. Under the guidance of your elders, you will definitely be able to do better.
