2.2 Prepare the sauce: Mix Xiangqi cooked sauce, Xiangqi bean paste and green onion sweet noodle sauce in a ratio of 1:2:2, add water and adjust to the shape as shown in the picture. The amount of sauce after mixing is twice the amount of minced meat. Preparation of minced meat: Add ginger juice or ginger powder to the minced meat, add a little soy sauce and mix well.

3.1 Add cooking wine and stir-fry over high heat until the meat particles are loose and the moisture in the meat filling is fried away. This way, the meat sauce will be fragrant and chewy. Add dark soy sauce to adjust the color.

4.2 Add the marinated meat filling and stir-fry over high heat.

5. Pour in the sauce and stir constantly. The sauce should be able to cover the meat filling (if there is less sauce, add water; if there is more sauce, use high heat). Bring to a simmer over medium heat.

6. Hold the pot lid with your left hand as a shield and wear gloves with your right hand to prevent splashes and burns. As the sauce thickens, it starts to splatter; keep stirring (you can see the splattering around it).

7. Add a tablespoon of white sugar. According to personal preference, simmer the soup over high heat until it is reduced to desired level (I think this level is better).

8. When the finished product is out of the pot, do not put it in metal containers as it will have a fishy smell. Let cool. Pairs well with all kinds of food.

9. After cooling, put it in a fresh-keeping box. It can be stored for a long time in the refrigerator's zero-degree fresh-keeping room. Can be heated in an egg cooker between uses.
