How to stir-fry clams

1. Pour the clams into the boiling water and blanch them. After a few minutes, all the clams will slowly open their shells.

2. After the clams are cooked, remove them from the pot and place them in a vegetable washing basin. Rinse them under the faucet, shaking the basin while rinsing. Repeat this three times (this step is to wash away the sand and dirt in the clams. When washing, you will find that you can see a lot of black dirt every time you rinse). Drain and set aside

3. Pour a proper amount of oil into the hot pan, add a small amount of minced garlic, some crushed red pepper, and a small spoonful of Lao Gan Ma and stir fry for two times.

4. Pour in the chopped garlic sprouts and stir-fry until the garlic sprouts wilt.

5. Pour in the blanched and washed clams and stir-fry. In this step, you can pour in an appropriate amount of light soy sauce and stir-fry.

6. Add the coriander and continue to stir fry

7. Add a small spoonful of salt and serve.
