How to make the pie soft and delicious

Pie is a popular pasta dish. In addition to buying pies at snack bars, people who have the time and conditions can also make pies at home. This way, they can eat pies that are healthier, more hygienic, and more to their taste. However, making pies is not an easy task, especially if you want to make the pie soft and delicious, you still need to master certain skills. Next, I will introduce to you the techniques of kneading dough and baking pies!

1. Methods of making and kneading dough :

1. Add a small amount of sugar and a little bit of salt to a bowl of clear water (1000g/500g water). It takes 2-3 hours in winter, 1 hour in summer and 1-2 hours in spring.

2. Heat in the microwave to 30~40 degrees (about one minute).

3. Add one level tablespoon of active dry yeast (available in supermarkets).

4. Mix well until the yeast dissolves (it looks a bit like mud soup). 1000g/15g noodles. Yeast temperature 40.

5. Use the "mud soup" to knead the dough until it feels comfortable.

6. Place in a warm place at 30-40 degrees (do not exceed 70 degrees, otherwise the live yeast will turn into dead yeast)

7. Wait for 15 to 20 minutes. After the dough is made, there will be no rebound when pressing a hole with your finger.

8. Add a little dry noodles to adjust the texture.

2. How to fry the pie:

1. Roll each dough into a ball. Just press from the four sides towards the middle to roll the dough into a thin sheet.

2. Wrap the fillings with various flavors, just like making dumplings.

3. Prepare a flat non-stick pan and turn on low heat. Place the buns fold side down into the pot.

4. Watch out, the pies are not rolled out with a rolling pin, but patted out with your hands. Use your fingers together to gently press the patty to make it thinner and larger. Try to pat it as evenly as possible. Don’t worry, the filling will not come out because the skin is very soft and elastic. Be careful not to touch the edge of the pot with your wrist to avoid burns.

5. When the crust feels slightly cooked and set, turn it over and continue to flatten it if you can. You can also press it down with the help of a silicone spatula. Cover with lid and sear. Change to medium heat.

6. Turn it over again and the skin will gradually turn white.

7. When the cake is about 70% cooked, brush a layer of oil on it with a brush. Turn over. Brush the other side with oil and turn it over. Change to high heat. The pancake will be cooked when the crust on both sides turns white, golden spots appear, and the pancake becomes bulging and the upper and lower crusts separate. If you don’t want to eat oily ones, just bake them dry until the pancakes are golden and puffy.

3. Notes:

If you want crispy crust, just make it and eat it right after it’s baked. If you want softer crust, just stack the baked pancakes together. The heat from both of them makes it soft.
