Another classic of old Beijing is the water-beaten stuffing. The buns, dumplings and pies made with water-beaten stuffing are all clumping together and not loose. The meat filling is very filling and not greasy. But don't add too much water. Add water in small amounts while stirring quickly in one direction with chopsticks until the meat filling becomes slightly sticky. You can also use the juice squeezed out of the cabbage to season the meat filling. If it is not enough, add more water to make it more flavorful.

6. Take out the dough that has been proofed, roll it into long strips, and pinch it into small pieces just like making buns or dumplings. Each piece should be about 25 grams. If your frying pan is big enough, you can pinch it into larger pieces. Then roll it into a crust, thicker in the middle and thinner around the edges, and put in the fillings.

10. Then use a rolling pin to gently roll it a few times so that the filling inside will be more even. Don't roll it too hard, otherwise it will break the skin.

11. Make other pies according to the above method. Light the fire, pour a little oil into the frying pan and start making pancakes. The fire should be medium or low, as high heat will cause the pancakes to burn. When one side of the pie crust turns golden brown, turn it over. Watch the pie crust bulge out, turn it over again, and then turn it over again when it bulges out. Do this 3 times and then serve.
