What is the method of making vegetable noodles?

In fact, this kind of food is rarely eaten in the south, because it is a particularly popular delicacy in the north, and the ingredients include both nutritious eggs and nourishing vegetables - leeks. Dough: Add appropriate amount of flour and boiling water, stir. When it is not hot, knead into a smooth dough. Cover with a damp cloth or place in a sealed fresh-keeping box or bag to prevent the skin from drying out.

Mix the dough: Usually we mix the dough with cold or warm water, but the dough for Cai Jiao must be mixed with boiling water. Take a basin, pour the flour, and then boil the water. After the water boils, pour it and stir with chopsticks. When the dough is soft and hard enough (softer is best), put it aside to cool.

1. Wash and chop the leeks into small pieces. 2. Beat the eggs in a bowl, add salt and stir, then fry them in a wok and chop them into small pieces. 3. Remove the Sichuan peppercorns and discard them. You can save the bottom oil for mixing vegetables.

Step 3: Mix the stuffing: Pour all the prepared ingredients into the pot with pepper oil (the pot should be cooled before pouring in to avoid scalding the leeks) and add the seasoning chicken powder and mix well.

Step 4: Roll the cold dough on the board and knead it evenly. Cut it into small pieces of equal size and roll it into small round pieces. The shape of the cabbage dumplings can be whatever you want.

Step 5: Fry the chopped vegetables. Put oil in a wok and heat the oil. Fry the chopped vegetables until golden brown and then remove from the pan and eat.
