Salmon, Arctic scallop and shrimp nigiri sushi recipe

1. Boil vinegar in a large bowl, pour in sushi vinegar, sugar and salt, stir to dissolve, adjust to your favorite flavor and add a small piece of kelp to enhance the flavor

2.1 Put the shrimps in salt water and cook for about 2 minutes, or until the color of the shrimps turns into a beautiful coral red

3.2 Mix rice and cook rice. Wash the rice, soak it for 20 minutes, and then cook it using the normal rice cooking method in a 1:1 ratio. Let it dry for a while, then mix the cooked rice with vinegar, cover it, and let it sit for about 20 minutes.

4. Take out the shrimp and wait until it cools down. Use a knife to cut the shrimp in half from the abdomen, but do not cut it completely. Remove the sand line on the back of the shrimp and lay each shrimp flat. Buy very fresh sashimi (salmon), cut into slices and set aside. Arctic clams, cut in half (don't cut them off) and lay them flat

5. Roll the rice into balls with your hands, add cooked corn kernels and peas and mix into small rice balls. You can use seaweed to make hair and mouth

6. Place shrimp, salmon slices and scallops on the rice balls. You can dip it in green mustard and Wanzi soy sauce according to your taste.
