How to make raisin sponge

1. Put the eggs and sugar into a mixing bowl, and use a larger container to hold an appropriate amount of hot water (the temperature of the hot water is about 60 degrees, which is a bit hot). If it is warm, you can take out the mixing bowl and continue beating on the countertop.

2. Beat the eggs until the volume expands significantly, the color becomes lighter, and the egg liquid hangs on the whisk for about 2-3 seconds before dripping down.

3. Sift the low-gluten flour and add it to the egg liquid. Mix well with a manual egg beater or a rubber spatula (do not stir in circles, just stir like you would when cooking, otherwise the flour will easily become gluten-free).

4. Add milk and salad oil and mix well in the same way

5. Pour into a small paper cup, about 80% to 90% full (this small paper cup is relatively soft, so you can use a small model to hold it up to prevent it from collapsing). Just throw a few raisins in (most of them will sink to the bottom, so don't worry about it. About 3 to 5 raisins will be enough for a small cake)

6. Preheat the oven to 175 degrees, middle layer of the oven, for about 25 minutes
