5. Slowly pour in the lemon juice, stirring while pouring. After a dozen seconds, you will see changes in the milk and whey separation will occur.

6. Let the reaction in the pot continue for 30 minutes. Then prepare the filtering tools. Mine are the mold and tofu cloth used for making tofu, which have been sterilized.

7. Place two layers of tofu cloth in the mold. The milk particles are very fine, so you need to use a denser cotton filter cloth. Medical gauze is not acceptable because the holes are too big and the milk will escape, which is a waste.

8. Add 4 grams of salt to the milk after the reaction is completed and stir evenly

9. Slowly pour it into the mold and place a large basin underneath. The filtered whey is a good thing and cannot be thrown away.

10. Let the whey drip from the bottom of the mold into a large basin and wait for about 30 minutes.

11. Wrap the tofu cloth neatly.

12. The filtered whey can be drunk directly, made into bread, or used as a facial mask. It is a very good thing and should not be wasted.

13. Fill the other leak-proof side of the mold with water, press it on the milk bag, and put it in the refrigerator overnight.

14. The next day, I made a light cheesecake with homemade cheese. It was super delicious.
