How to make Tainan Zongzi

1. Wash the glutinous rice, soak it for 2 hours, then drain it; wash the peanuts, soak them in water for 6 hours, then drain them and set aside

2. Wash and cut the pork belly into pieces. Pour 1 tablespoon of oil into the pot and heat it. Add the sliced ​​ginger and shredded green onion into the pot and stir-fry until fragrant. Add the pork belly and stir-fry.

3. Add seasoning A (except water) and peanuts to the pot in step 2 and stir-fry briefly. Add 200 grams of water from seasoning A and bring to a boil. Turn to low heat and simmer for about 30 minutes. Turn off the heat and soak for later use

4. Wash the mushrooms, soak until soft, and dice; wash the dried shrimps, soak until soft, remove and drain; add a little oil to the pan and heat it, pour in the diced mushrooms and dried shrimps, stir-fry until fragrant and set aside

5. Take a pot, add 1 tablespoon of oil and heat it up, add the fried shallots in seasoning B and stir-fry until fragrant, then add the glutinous rice and the remaining ingredients in seasoning B and stir-fry evenly.

6. Take out the ingredients from step 3, separate the braised peanuts and meat, add the braised peanuts to the pot from step 5, mix well and set aside

7. Wash the leaves, put them in boiling water to blanch, take them out and rinse them in cold water, take two pieces of leaves and fold them into a funnel shape, add 1 tablespoon of ingredients from step 6, then add the fried mushrooms, dried shrimps, braised pork belly and salted egg yolk from step 4, then add 1 tablespoon of glutinous rice, and wrap them into a square shape.

8. Tie the two corners of the zongzi with the zongzi rope and then tie the other two corners tightly. Bring the water to a boil, put the zongzi in, cook over medium-low heat for 90 minutes, turn off the heat, simmer until the water is cool, take it out, peel it and eat it. If you like to eat it with sauce, you can also dip it in sauce.
