2. Add cooking wine, cornstarch, salt, light soy sauce and dark soy sauce into the eel dish and mix well.

3. Heat the oil in a pan and add the shredded ginger first

5. Pour out the eel paste, make a small hole in the middle and add chopped green onion and white pepper powder;

6. Heat sesame oil and pour it into the eel paste in step 5. It will make a crackling sound, hence the name: Fried eel paste
